PREPARATION

STEP 1

Preheat the oven to 180º and line a large baking tray.

Place the oat flakes in a food processor and grind them until flour.

In a large bowl, combine the dry ingredients: oatmeal, Sweetch Natural, chia seeds, baking powder, zest from 1 lemon and a pinch of salt. Mix the ingredients.

To this dry mixture add the vegetable drink, the olive oil, and the lemon juice. Mix everything very well until you form a homogeneous mass.

Note: The dough shouldn’t be too runny (it sticks to your hands), but it shouldn’t be too dry either (impossible to create balls). For best results, wrap everything up and let it rest for 10 minutes so that the flour absorbs part of the moisture.

STEP 4

Form small balls with the dough.

Place the balls on the oven tray and flatten with a fork to create the shape of cookies or biscuits.

Optional: add lemon zest over the biscuits and sprinkle a bit of Sweetch Natural.

Note: it is possible to roll out the dough with a rolling pin and cut the cookies with a mold (they will be crispier).

STEP 5

Bake in the oven for about 15 to 20 minutes (until they get golden). Allow to cool completely before storing in an airtight glass jar.

The biscuits have a biscuit texture (softer) due to the shape.

  • 200gr of oat flour or crushed oat flakes
  • 1 to 2 tablespoons of chia seeds
  • 1 teaspoon of yeast for cakes
  • zest of 1 lemon the amount depends on taste
  • pinch of salt
  • 60ml of oat, coconut or almond vegetable drink
  • 2 tablespoons of lemon juice (15 ml + 15ml)
  • 2 tablespoons of olive oil or liquifed coconut oil
