PREPARATION

STEP 1
Preheat the oven to 180ºC.

With the help of a chopper, grind the cookies and add the melted butter in the microwave.

Line a tart pan with a removable bottom with the cookie mixture, pressing down well with your fingers. Take it to the fridge for 20 minutes.

Separate the yolks from the whites.

n a bowl, mix the egg yolks, condensed milk, lemon juice and lemon zest well until you get a smooth and velvety cream.

Beat the whites with the Sweetch Natural until you form a meringue.

Pour the egg and lemon mixture into the mold and bake at 170ºC for 15 minutes. Remove and let it cool.

Carefully cover with the meringue, forming small peaks with the spoon.

Put it back to the oven for 5 minutes to brown the meringue.
